  • 2 pieces boneless, skinless chicken breasts, grilled and sliced
  • 1 pound penne pasta can substitute for another pasta variety
  • 2 cups cherry tomatoes, halved
  • 1/4 cup red onion, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup fresh basil, chopped add just before serving for best flavor
  • 1/4 cup balsamic vinegar for marinating chicken or added flavor
  • 1/3 cup olive oil
  • 1/2 cup grated Parmesan cheese for topping each serving
  • to taste Salt and pepper

Method
 

Preparation
  1. Cook the penne pasta according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium heat. Add the minced garlic and chopped red onion, sautéing until softened and fragrant.
  3. Toss in the grilled chicken slices and halved cherry tomatoes, cooking until the tomatoes start to release their juices.
  4. Stir in the cooked pasta, balsamic vinegar, and freshly chopped basil. Season with salt and pepper to taste.
  5. Serve warm and generously top each serving with grated Parmesan cheese.
