  • 4 pieces boneless, skinless chicken breasts (about 1.5–2 lb total)
  • 1 tbsp olive oil (plus a little more for tossing tomatoes)
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning (or a mix of dried oregano, basil, rosemary)

  • 1.5 cups cherry tomatoes, halved (use grape or cocktail tomatoes if needed)
  • 1.5 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • to taste Fresh chopped basil or parsley (for garnish)
  • Optional: balsamic glaze for drizzling
Substitution Notes
  • swap mozzarella for provolone or fontina for a different flavor
  • Use bone-in thighs if preferred — they’ll need longer cooking time.
  • For a dairy-free version, omit cheeses and finish with olive oil and more fresh herbs.

Preparation
  1. Preheat your oven to 400°F (200°C). Lightly oil a 9x13-inch baking dish or an oven-safe skillet. Pat the chicken breasts dry with paper towels.
  2. Rub each breast with 1 tbsp olive oil, then evenly season with garlic powder, Italian seasoning, salt, and pepper.
Searing (Optional)
  1. Heat a skillet over medium-high heat. Sear chicken 1–2 minutes per side until golden (you’re not cooking through).
Assembly
  1. Place the seasoned (or seared) chicken breasts in the prepared baking dish, spaced slightly apart.
  2. Toss halved cherry tomatoes with a tiny pinch of salt, a drizzle of olive oil, and a little extra Italian seasoning if desired. Pile the tomatoes evenly over the chicken.
  3. Sprinkle shredded mozzarella over the tomatoes and chicken, then finish with the grated Parmesan.
Baking
  1. Bake in the preheated oven for 20–30 minutes, depending on breast thickness, until chicken reaches 165°F (74°C) and cheese is golden.
  2. Let the dish rest for 5 minutes out of the oven. Sprinkle with chopped basil or parsley and drizzle with balsamic glaze before serving.
