Preparation
- Combine diced tomatoes, basil, garlic, a pinch of salt, 1 tbsp olive oil, and a splash of balsamic. Let sit at room temperature for 10-15 minutes to meld flavors.
- Pound chicken breasts to about 1/2-inch thickness for even cooking. Season both sides with Italian seasoning, 1 tsp salt, and 1/2 tsp black pepper.
Cooking
- Heat a large skillet over medium-high and add 1-2 tbsp olive oil. When shimmering, add chicken. Cook for 3-4 minutes without moving until nicely browned. Flip and cook for another 3-4 minutes.
- Reduce heat to low, top each breast with mozzarella, and cover the pan. Cook for 1-2 minutes until the cheese softens and melts, or transfer to a 375°F oven for 3-5 minutes.
Finishing and Serving
- Spoon the tomato-basil mixture over each cheesy breast. In a small bowl, whisk 1-2 tbsp balsamic vinegar with 1 tsp honey and drizzle over the plated chicken. Add fresh basil and a grind of black pepper.

Notes
Cool leftovers within two hours and store in an airtight container for up to 3-4 days. Reheat at a low oven (300-325°F) for 10-12 minutes, or microwave gently covered for 60-90 seconds.
