Ingredients

For the chicken
  • 4 pieces boneless, skinless chicken breasts (or 6 small cutlets) Pounded to even thickness
  • 1-1½ tsp Italian seasoning Or a mix of oregano, basil, thyme
  • 1 pinch salt To taste
  • 1 pinch freshly ground black pepper
  • 1-2 tbsp olive oil For pan-searing
  • 8 oz fresh mozzarella Sliced or torn
For the bruschetta topping
  • 2 cups diced ripe tomatoes Roma or vine-ripe
  • cup fresh basil Chiffonade
  • 2 cloves garlic Minced
  • 1-2 tbsp balsamic vinegar Plus 1 tsp honey or more to taste
  • 1 tbsp chopped shallot Optional
  • 1 pinch red pepper flakes Optional

Method

Preparation
  1. Combine diced tomatoes, basil, garlic, a pinch of salt, 1 tbsp olive oil, and a splash of balsamic. Let sit at room temperature for 10-15 minutes to meld flavors.
  2. Pound chicken breasts to about 1/2-inch thickness for even cooking. Season both sides with Italian seasoning, 1 tsp salt, and 1/2 tsp black pepper.
Cooking
  1. Heat a large skillet over medium-high and add 1-2 tbsp olive oil. When shimmering, add chicken. Cook for 3-4 minutes without moving until nicely browned. Flip and cook for another 3-4 minutes.
  2. Reduce heat to low, top each breast with mozzarella, and cover the pan. Cook for 1-2 minutes until the cheese softens and melts, or transfer to a 375°F oven for 3-5 minutes.
Finishing and Serving
  1. Spoon the tomato-basil mixture over each cheesy breast. In a small bowl, whisk 1-2 tbsp balsamic vinegar with 1 tsp honey and drizzle over the plated chicken. Add fresh basil and a grind of black pepper.
