  • 1 cup balsamic vinegar
  • 1/3 cup brown sugar

Bruschetta Topping Ingredients

  • 2 cups tomatoes diced
  • 3 cloves garlic minced
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper freshly ground
  • 1 tbsp balsamic or red wine vinegar
  • 1 tbsp olive oil
  • 1/3 cup basil leaves fresh, chopped

Chicken Ingredients

  • 4 chicken breasts boneless, skinless
  • 4 tbsp olive oil divided
  • 1 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper freshly ground
  • 1 1/3 cups mozzarella cheese shredded

Instructions
 

  • Create the balsamic glaze by simmering balsamic vinegar and brown sugar in a saucepan until it's reduced by half and thick enough to coat a spoon, stirring occasionally.
  • For the bruschetta topping, gently mix diced tomatoes, minced garlic, salt, pepper, vinegar, olive oil, and basil in a bowl. Adjust the seasoning with salt and pepper according to taste.
  • Prepare the chicken by combining olive oil, Italian seasoning, salt, and pepper. Brush this mixture over both sides of the chicken breasts.
  • In a skillet, cook the chicken in olive oil until golden brown and fully cooked. Then, lower the heat, top each breast with mozzarella, cover with foil, and let the cheese melt.
  • Finish by topping the chicken with the bruschetta mixture and drizzling with balsamic glaze. Serve immediately for the best experience.
