  • 1/3 cup brown sugar
Bruschetta Topping Ingredients
  • 2 cups tomatoes diced
  • 3 cloves garlic minced
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper freshly ground
  • 1 tbsp balsamic or red wine vinegar
  • 1 tbsp olive oil
  • 1/3 cup basil leaves fresh, chopped
Chicken Ingredients
  • 4 chicken breasts boneless, skinless
  • 4 tbsp olive oil divided
  • 1 tsp Italian seasoning
  • 1/2 tsp kosher salt
  • 1/2 tsp black pepper freshly ground
  • 1 1/3 cups mozzarella cheese shredded

Method
 

  1. Create the balsamic glaze by simmering balsamic vinegar and brown sugar in a saucepan until it's reduced by half and thick enough to coat a spoon, stirring occasionally.
  2. For the bruschetta topping, gently mix diced tomatoes, minced garlic, salt, pepper, vinegar, olive oil, and basil in a bowl. Adjust the seasoning with salt and pepper according to taste.
  3. Prepare the chicken by combining olive oil, Italian seasoning, salt, and pepper. Brush this mixture over both sides of the chicken breasts.
  4. In a skillet, cook the chicken in olive oil until golden brown and fully cooked. Then, lower the heat, top each breast with mozzarella, cover with foil, and let the cheese melt.
  5. Finish by topping the chicken with the bruschetta mixture and drizzling with balsamic glaze. Serve immediately for the best experience.
