Ingredients
  

For the Cookies
  • 1 cup butter (softened) Ensure your butter is softened, not melted.
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 cups all-purpose flour Can substitute with gluten-free flour.
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup pecans (finely chopped) Can substitute with walnuts or omit for nut-free.
For the Frosting
  • 1 cup brown sugar
  • 1/2 cup milk
  • 1 tbsp butter
  • 2-3 cups powdered sugar Adjust thickness by adding more powdered sugar or milk as needed.

Method
 

Preparation
  1. Preheat your oven to 350ºF (175ºC).
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add in the egg and vanilla extract, beating until fully incorporated.
  4. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add this mixture to the wet ingredients, mixing until a uniform dough forms.
  5. Fold in the finely chopped pecans.
  6. On a greased baking sheet, place 1-inch balls of dough, leaving space between them.
  7. Bake for 10-12 minutes, or until the edges are lightly golden brown.
  8. Allow the cookies to cool completely before frosting.
Frosting
  1. In a saucepan, combine 1 cup of brown sugar, 1/2 cup of milk, and 1 tablespoon of butter. Cook over medium heat until it comes to a boil, stirring continuously.
  2. Remove from heat and gradually whisk in 2-3 cups of powdered sugar until smooth and spreadable.

Notes
