  • 8 pieces ripe peaches, peeled, pitted, and sliced Feel free to substitute with nectarines or plums.
Sugars and Flavorings
  • 1 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
Batter Components
  • 1/4 cup unsalted butter, melted
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1 cup milk Use dairy-free milk for a lighter twist.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, combine the sliced peaches, brown sugar, granulated sugar, lemon juice, vanilla extract, cinnamon, and nutmeg. Stir until the peaches are well-coated and set aside to macerate for about 10-15 minutes.
  3. Pour the melted butter into a 9×13-inch baking dish.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the milk to the dry ingredients, mixing until a smooth batter forms.
Assembly and Baking
  1. Pour the batter over the melted butter in the baking dish. Do not stir!
  2. Spoon the peach mixture evenly over the batter. Do not stir again; the batter will rise to the top as it bakes.
  3. Place the baking dish in your preheated oven and bake for 40-45 minutes, or until the top is a lovely golden brown and the edges are bubbling.
  4. Allow the cobbler to cool for at least 15 minutes before serving.
