Ingredients
  

Main Ingredients

  • 4 large large flour tortillas
  • 4 eggs
  • 1 cup shredded cheese (cheddar or your choice)
  • 1/2 cup cooked bacon, chopped
  • 1/2 cup cooked sausage, crumbled
  • 1/2 cup bell peppers, diced
  • 1/4 cup onions, diced
  • Salt and pepper to taste
  • Oil or butter for cooking

Instructions
 

Preparation

  • In a bowl, whisk the eggs with salt and pepper.
  • In a skillet over medium heat, cook the onions and bell peppers until softened.
  • Add in the cooked bacon and sausage, then pour in the beaten eggs. Cook, stirring gently, until the eggs are fluffy and cooked through.

Cooking

  • Place one tortilla in a separate skillet over medium heat. Sprinkle half of the cheese over the tortilla.
  • Add half of the egg mixture on top of the cheese, then sprinkle the remaining cheese on top.
  • Top with a second tortilla and cook until the bottom tortilla is golden brown. Flip and cook the other side until golden and crispy.
  • Remove from the skillet and repeat with the remaining ingredients.

Serving

  • Cut into wedges and serve warm, optionally with salsa, sour cream, or avocado.

Notes

Can freeze for future breakfasts. Make sure not to overcook the eggs; they should be soft and fluffy. Feel free to mix and match the fillings. Use a non-stick skillet or a little oil to prevent sticking.
