- In a bowl, whisk the eggs with salt and pepper.
- In a skillet over medium heat, cook the onions and bell peppers until softened.
- Add in the cooked bacon and sausage, then pour in the beaten eggs. Cook, stirring gently, until the eggs are fluffy and cooked through.
Cooking
- Place one tortilla in a separate skillet over medium heat. Sprinkle half of the cheese over the tortilla.
- Add half of the egg mixture on top of the cheese, then sprinkle the remaining cheese on top.
- Top with a second tortilla and cook until the bottom tortilla is golden brown. Flip and cook the other side until golden and crispy.
- Remove from the skillet and repeat with the remaining ingredients.
Serving
- Cut into wedges and serve warm, optionally with salsa, sour cream, or avocado.
