  • 4 cups baby spinach Fresh spinach gives the best flavor.
  • 1 ripe avocado, sliced Use ripe avocados for best taste and creaminess.
  • 1/2 cup fresh blueberries
  • 1/4 cup dried cranberries Adds sweetness to the salad.
  • 1/4 cup crumbled feta cheese Can substitute with goat cheese or omit for a vegan version.
  • 2 tbsp pumpkin seeds (or sunflower seeds) For added crunch.
  • 1 tbsp poppy seeds Add for extra texture.
  • 3 tbsp poppy seed vinaigrette (or dressing of choice) Choose a dressing that complements the salad.

Preparation

  • In a large bowl, add baby spinach, blueberries, cranberries, avocado slices, and feta.
  • Drizzle with poppy seed vinaigrette and sprinkle poppy seeds and pumpkin seeds on top.
  • Gently toss just before serving to coat evenly.

Notes

Store the ingredients separately in an airtight container to keep them fresh. Combine just before serving to prevent browning of the avocado. This salad pairs well with grilled chicken, fish, or a warm piece of bread.
