  • 1/2 cup unsalted butter Softened
  • 1 cup white sugar
  • 2 large eggs Lightly beaten
  • cup whole milk
  • 2 teaspoons pure vanilla extract
  • 1 medium juice of lemon
  • 2 large zest of lemons
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups fresh blueberries
  • 1 cup cream cheese

Method
 

Preparation
  1. Preheat your oven to 350°F (176°C) and grease a 9x5 inch loaf pan.
  2. In a medium bowl, mix the unsalted butter and white sugar until light and fluffy.
  3. Add the eggs, whole milk, pure vanilla extract, lemon juice, and zest from the lemons. Combine until smooth.
  4. In a large bowl, mix the all-purpose flour, baking powder, baking soda, and salt. Create a well in the middle and pour in the wet ingredients.
  5. Stir together gently, being careful not to overmix.
  6. Fold in the fresh blueberries and cream cheese until evenly distributed.
  7. Pour the batter into your prepared loaf pan.
Baking
  1. Bake in the center of the oven for 60 to 70 minutes or until a skewer comes out clean.
  2. Allow the loaf to cool in the pan for 20 minutes before removing.
