Preparation
- Preheat your oven to 375°F.
- In a large mixing bowl, toss the blueberries with both sugars, lemon juice, corn starch, and 1/2 teaspoon of cinnamon until evenly coated. Transfer this mixture to a baking dish.
- In another bowl, mix flour, the remaining brown and white sugars, baking powder, and salt together.
- Cut in the butter pieces until the mixture resembles coarse crumbs.
- Pour in the boiling water and mix gently just until combined—don’t overmix!
- Spoon the topping over the blueberry filling. For a sweet crunch, sprinkle cinnamon and additional sugar over the top.
Baking
- Bake for about 35-40 minutes or until the topping is golden brown and the filling is bubbly.
- Let it cool for a few moments before digging in!
