Ingredients
  

Blueberry Filling
  • 6 cups blueberries
  • 1/3 cup sugar
  • 1/3 cup brown sugar
  • 2 1/2 tablespoons lemon juice
  • 1 tablespoon corn starch
  • 1/2 teaspoon cinnamon
Cobbler Topping
  • 1 1/2 cups all-purpose flour
  • 1/3 cup brown sugar for the topping
  • 1/3 cup sugar for the topping
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 stick butter cut into small pieces
  • 1/3 cup boiling water
  • 1 teaspoon cinnamon for additional topping
  • 2 tablespoons sugar for additional topping

Method
 

Preparation
  1. Preheat your oven to 375°F.
  2. In a large mixing bowl, toss the blueberries with both sugars, lemon juice, corn starch, and 1/2 teaspoon of cinnamon until evenly coated. Transfer this mixture to a baking dish.
  3. In another bowl, mix flour, the remaining brown and white sugars, baking powder, and salt together.
  4. Cut in the butter pieces until the mixture resembles coarse crumbs.
  5. Pour in the boiling water and mix gently just until combined—don’t overmix!
  6. Spoon the topping over the blueberry filling. For a sweet crunch, sprinkle cinnamon and additional sugar over the top.
Baking
  1. Bake for about 35-40 minutes or until the topping is golden brown and the filling is bubbly.
  2. Let it cool for a few moments before digging in!
