Ingredients
  

Crust Ingredients
  • 1 cup crushed graham crackers Can use gluten-free graham crackers for a gluten-free version.
  • 1/2 cup unsalted butter, melted
Filling Ingredients
  • 2 cups cream cheese, softened Ensure it’s at room temperature for a smooth batter.
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 cups fresh blueberries Can substitute with frozen blueberries, do not thaw.

Method
 

Preparation
  1. Preheat your oven to 325°F (160°C) and line a 9x9-inch baking pan with parchment paper.
Make the Crust
  1. In a mixing bowl, combine the crushed graham crackers and melted butter. Press this mixture firmly into the bottom of the prepared baking pan.
Prepare the Filling
  1. In a large bowl, beat together the softened cream cheese and sugar until smooth.
  2. Mix in the vanilla extract and then add the eggs, one at a time, ensuring each is fully incorporated.
Combine and Fold
  1. Gently fold in the fresh blueberries, being careful not to break them.
Bake
  1. Pour the cheesecake mixture over the crust and bake for about 35-40 minutes or until the filling is set with a slight jiggle in the center.
Cool Down
  1. Allow the bars to cool completely in the pan on a wire rack.
  2. Once cooled, refrigerate for at least 2 hours to firm up.
