Ingredients
  

For the sandwich
  • 4 slices artisan bread (sourdough or rustic white) Sturdy slices hold up to the filling.
  • 6-8 oz brie cheese, sliced Room temperature slices melt best. Remove part of the rind if you dislike the texture.
  • 1/2 cup fresh blackberries Use ripe berries for optimal sweetness. If using frozen, thaw and drain first.
  • 1 tbsp balsamic glaze Store-bought or homemade (reduce balsamic vinegar with a little sugar until syrupy).
  • 1 tbsp butter, softened For spreading on the bread; mayonnaise works as an alternative for ultra-even browning.
  • to taste fresh thyme leaves Optional; adds a tiny herbaceous note.

  • prosciutto For salty contrast.
  • plant-based cheese For a dairy-free version.
  • maple syrup As a substitute for balsamic glaze in a vegan version.

Method
 

Preparation
  1. Let the brie sit for 10–15 minutes at room temperature to melt evenly.
  2. Rinse and pat blackberries dry.
  3. Spread softened butter on one side of each bread slice.
Cooking
  1. Place two slices buttered-side-down in a cold skillet.
  2. Layer with brie, scatter blackberries, and drizzle half the balsamic glaze over the top.
  3. Top with remaining bread, buttered side up.
  4. Cook for 3–4 minutes per side until golden brown and melty. Lower heat and cover if bread browns before cheese melts.
Serving
  1. Remove from the pan and let rest for 1 minute.
  2. Drizzle the remaining balsamic glaze and scatter thyme leaves.
  3. Slice and serve immediately.
