Preparation
- Let the brie sit for 10–15 minutes at room temperature to melt evenly.
- Rinse and pat blackberries dry.
- Spread softened butter on one side of each bread slice.
Cooking
- Place two slices buttered-side-down in a cold skillet.
- Layer with brie, scatter blackberries, and drizzle half the balsamic glaze over the top.
- Top with remaining bread, buttered side up.
- Cook for 3–4 minutes per side until golden brown and melty. Lower heat and cover if bread browns before cheese melts.
Serving
- Remove from the pan and let rest for 1 minute.
- Drizzle the remaining balsamic glaze and scatter thyme leaves.
- Slice and serve immediately.
