Preparation
- In a bowl, combine sliced chicken with cornstarch, salt, and black pepper. Toss to coat evenly.
- In a large skillet or wok, heat vegetable oil over medium-high heat.
- Add the chicken to the pan in a single layer. Cook for about 4-5 minutes until golden brown. Remove the chicken and set aside.
- In the same skillet, add chopped onion and sliced mushrooms. Sauté for 3-4 minutes until soft.
- Stir in minced garlic and cook for an additional minute until fragrant.
- Return the chicken to the skillet. Pour in soy sauce, oyster sauce, sesame oil, and water. Mix well.
- Allow the mixture to simmer for about 5 minutes, or until the chicken is cooked through and the sauce slightly thickens.
- Season with freshly ground black pepper to taste and garnish with green onions if desired.
