  • 2 cups elbow macaroni Cook according to package instructions
  • 1 cup mayonnaise For creamy dressing
  • 2 tablespoons dijon mustard For flavor
  • 1 cup chopped celery
  • 1 cup chopped bell pepper
  • 1/2 cup red onion, chopped
  • 1/4 cup sweet pickle relish To taste salt and pepper

Preparation

  • Cook the elbow macaroni according to package instructions. Drain and let cool.
  • In a large bowl, combine the mayonnaise and dijon mustard.
  • Add the cooled macaroni, celery, bell pepper, red onion, and sweet pickle relish to the bowl.
  • Mix until well combined, then season with salt and pepper to taste.
  • Chill in the refrigerator for at least an hour before serving.

Notes

Let the macaroni cool completely before mixing with the dressing to prevent sogginess. Adjust mayonnaise and dijon mustard based on taste. You can add carrots or cucumbers for extra texture.
