Ingredients
  

Main Ingredients
  • 1 package 1 (10 oz) package frozen chopped spinach, thawed & drained Make sure to fully drain the spinach.
  • 1 cup sour cream For a creamier texture, use full-fat sour cream.
  • 1/2 cup mayonnaise For a creamier texture, use full-fat mayonnaise.
  • 1 can 1 (8 oz) can water chestnuts, drained & chopped Make sure to fully drain the water chestnuts.
  • 1 packet dry vegetable soup mix (like Knorr)
  • 1/4 cup diced red bell pepper (optional) Can be omitted if not desired.
  • 1/2 tsp garlic powder
  • Salt & pepper to taste
  • Crusty bread or crackers for serving Serve with an assortment of crackers.

Method
 

Preparation
  1. In a large bowl, mix together sour cream, mayonnaise, and the dry vegetable soup mix until well combined.
  2. Stir in the chopped and drained spinach along with the water chestnuts.
  3. If using, add in the diced red bell pepper.
  4. Season the mixture with garlic powder, salt, and pepper. Mix thoroughly.
  5. Chill in the fridge for at least 1 hour to allow the flavors to blend.
Serving
  1. Serve in a bowl surrounded by chunks of crusty bread or your favorite crackers.
  2. You can also serve fresh veggies like carrot sticks, celery, or bell pepper slices for a healthier option.
