Ingredients
  

Berry Filling
  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 4 cups raspberries or blueberries
  • 2 tablespoons water
  • 1 teaspoon lemon juice
Dough Topping
  • 1 cup Bisquick Original Pancake and Baking Mix
  • 1/4 cup milk
  • 1 tablespoon sugar
  • 1 tablespoon butter, melted
For Serving
  • to taste Vanilla ice cream or whipped cream

Method
 

Preparation
  1. Preheat the oven to 425°F.
  2. In a 2-quart saucepan, mix the sugar and cornstarch. Stir in the raspberries, water, and lemon juice.
  3. Cook this mixture over medium heat until it starts boiling, stirring constantly for about 1 minute.
  4. Pour the berry mixture into an 8-inch glass baking dish or baking pan.
  5. In a separate bowl, stir together the Bisquick mix, milk, sugar, and melted butter until a soft dough forms.
  6. Drop dollops of dough over the hot berry layer, spreading it out a bit.
Baking
  1. Bake for around 15 minutes, until the berry mixture is bubbly and the topping is a lighter brown.
  2. Once baked, cool the dish slightly on a wire rack. Serve warm with a scoop of ice cream.
