- In a large skillet, heat the olive oil over medium heat.
- Add the beef strips and cook until they are browned on all sides. Remove them from the pan and set aside.
- In the same skillet, toss in the chopped onions and minced garlic, sautéing until the onions turn translucent.
- Add the sliced mushrooms and cook until they soften.
- Sprinkle the flour over the mushroom mixture and stir well to combine.
- Gradually pour in the beef broth, stirring until the sauce thickens.
- Mix in the Dijon mustard and then return the beef to the skillet.
- Lower the heat, and gently fold in the sour cream. Season with salt and pepper to taste.
- Serve the rich beef mixture over cooked egg noodles or rice.
