  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 8 ounces mushrooms, sliced Cremini or shiitake can add unique flavors.
  • 2 tablespoons flour
  • 1 cup beef broth For richer flavor, use beef broth instead of water.
  • 1 tablespoon Dijon mustard
  • 1 cup sour cream Greek yogurt can be used as a lighter alternative.
  • to taste Salt and pepper
  • 2 tablespoons olive oil
  • as needed Cooked egg noodles or rice, for serving

Method
 

Cooking Process
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the beef strips and cook until they are browned on all sides. Remove them from the pan and set aside.
  3. In the same skillet, toss in the chopped onions and minced garlic, sautéing until the onions turn translucent.
  4. Add the sliced mushrooms and cook until they soften.
  5. Sprinkle the flour over the mushroom mixture and stir well to combine.
  6. Gradually pour in the beef broth, stirring until the sauce thickens.
  7. Mix in the Dijon mustard and then return the beef to the skillet.
  8. Lower the heat, and gently fold in the sour cream. Season with salt and pepper to taste.
  9. Serve the rich beef mixture over cooked egg noodles or rice.

Notes
