  • 1 pound beef sirloin, cut into strips Use a sharp knife to slice the beef against the grain for tenderness.
  • 2 tablespoons olive oil
  • 1 onion sliced
  • 2 cups mushrooms, sliced Mix different kinds of mushrooms for a deeper flavor.
  • 2 cloves garlic, minced
  • 1 cup beef broth Add more if sauce thickens too much.
  • 1 tablespoon Worcestershire sauce
  • 1 cup sour cream May substitute with Greek yogurt or a dairy-free alternative.
  • Salt and pepper to taste Taste as you go to adjust seasonings.
  • Butter for serving Use for the noodles or rice.
  • Noodles or rice for serving Serve as a base for the stroganoff.

Cooking
  1. In a large skillet, heat the olive oil over medium-high heat.
  2. Add the beef strips and sauté until browned. Once done, remove and set aside.
  3. In the same skillet, add sliced onions and mushrooms. Cook until softened, then add minced garlic and sauté for another minute.
  4. Pour in the beef broth and Worcestershire sauce, scraping up any flavorful bits from the bottom of the pan.
  5. Stir in the sour cream, returning the beef to the skillet. Cook until everything is heated through.
  6. Adjust salt and pepper to your taste.
  7. Plate over buttery noodles or rice, and enjoy!

Notes
