Ingredients
  

For the filling
  • 1 pound ground beef Substitute with shredded rotisserie chicken if short on time.
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) enchilada sauce
  • 2 cups Mexican blend cheese Or cheese of your choice.
  • 8-10 pieces flour or corn tortillas Corn tortillas are gluten-free; warm them in a skillet to prevent cracking.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, sauté the chopped onions and minced garlic over medium heat until they are soft and fragrant.
  3. Add the ground beef to the skillet, cooking until it’s nicely browned. Drain excess grease if necessary.
  4. Stir in the enchilada sauce, making sure the beef is well-coated.
Assembly and Baking
  1. Spoon a generous amount of the beef mixture onto each tortilla, sprinkle with cheese, and roll them up tightly.
  2. Place the rolled tortillas seam-side down in a baking dish. Pour any remaining enchilada sauce over the top and sprinkle with the remaining cheese.
  3. Bake for about 20-25 minutes or until the cheese is melted and bubbly.
Serving
  1. Serve hot and enjoy the compliments!
