Preparation
- Preheat your oven to 350°F (175°C).
- In a large skillet, sauté the chopped onions and minced garlic over medium heat until they are soft and fragrant.
- Add the ground beef to the skillet, cooking until it’s nicely browned. Drain excess grease if necessary.
- Stir in the enchilada sauce, making sure the beef is well-coated.
Assembly and Baking
- Spoon a generous amount of the beef mixture onto each tortilla, sprinkle with cheese, and roll them up tightly.
- Place the rolled tortillas seam-side down in a baking dish. Pour any remaining enchilada sauce over the top and sprinkle with the remaining cheese.
- Bake for about 20-25 minutes or until the cheese is melted and bubbly.
