  • 1 pound Ground beef Use lean for a healthier option.
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 2 cups Homemade enchilada sauce Store-bought sauce may be used.
  • 2 cups Mexican blend cheese, shredded
  • 8 large Tortillas

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, sauté onions and garlic until softened.
  3. Add ground beef and cook until browned.
  4. Prepare homemade enchilada sauce.
  5. Place beef mixture in tortillas, roll them up, and place in a baking dish.
Baking
  1. Pour enchilada sauce over the top and sprinkle with cheese.
  2. Bake for 20-25 minutes or until cheese is bubbly.
