  • 1 lb ground beef lean is fine to reduce splatter and grease
  • 1 can (10 oz) enchilada sauce the star ingredient; use mild, medium, or spicy depending on preference
  • 1 can (4 oz) diced green chiles adds a gentle, smoky heat
  • 1 onion, diced gives the beef depth and sweetness
  • 1 teaspoon garlic powder convenient and consistent
  • 1 teaspoon cumin brings warmth and earthiness
  • Salt and pepper to taste essential seasonings
  • 8 pieces flour tortillas easier to layer without cracking; swap for corn if preferred
  • 2 cups shredded Cheddar cheese sharpness and color
  • 2 cups shredded Monterey Jack cheese melts into creamy pockets

Method
 

Preparation
  1. Preheat oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
  2. Heat a large skillet over medium-high. Add the ground beef and diced onion; cook until beef is no longer pink and onions are translucent, about 6-8 minutes.
  3. Drain excess fat if using higher-fat beef. Return skillet to heat.
  4. Stir in garlic powder, cumin, salt, and pepper; cook 30 seconds to bloom the spices.
  5. Add the diced green chiles and about 3/4 of the enchilada sauce to the beef. Simmer 2-3 minutes so flavors marry.
Assembly
  1. Place a single layer of 2-3 tortillas in the bottom of the prepared dish (overlap as needed).
  2. Spread one-third of the beef mixture over the tortillas, then sprinkle with a third of the mixed cheeses.
  3. Repeat layers (tortillas → beef → cheese) until you’ve used the beef and cheese, finishing with tortillas on top if you prefer, then pour remaining sauce over and top with the last of the cheese.
Cooking
  1. Bake uncovered for 20-25 minutes, until cheese is melted and sauce bubbles. For a golden top, broil 1-2 minutes—watch closely.
  2. Let rest 5-10 minutes before cutting to help slices hold together.

Notes
