Sauce Ingredients

  • 3/4 cup low sodium beef broth
  • 3 tablespoons low sodium soy sauce
  • 2 tablespoons rice wine or mirin
  • 1/2 teaspoon sesame oil
  • 1 tablespoon cornstarch

Main Dish Ingredients

  • 1-1 1/4 lbs beef steak, thinly sliced
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil
  • 1 medium onion, halved and sliced
  • 2 ribs celery, chopped
  • 2 large carrots, chopped
  • 8 ounces cremini or white button mushrooms, sliced
  • 1 1/2 cups snow peas
  • 2 cloves garlic, minced
  • 1 8 ounce can water chestnuts, drained

Instructions
 

  • Whisk together beef broth, soy sauce, rice wine, sesame oil, and cornstarch in a bowl and set aside.
  • Coat beef slices with cornstarch. In a large skillet, heat vegetable oil over medium-high and brown beef on both sides. Do this in batches to avoid overcrowding. Set beef aside.
  • In the same skillet, add more oil if necessary, and sauté onion, celery, carrots, and mushrooms until the mushrooms brown and vegetables are tender. Include snow peas in the final minute of cooking.
  • Reduce heat, add garlic and water chestnuts, cooking for about a minute before transferring them to the plate with beef.
  • Re-whisk the sauce and heat in the skillet until thickened. Return the beef and vegetables to the skillet, tossing to coat evenly. Serve immediately for the best flavor.
