  • 1.5 lbs beef chuck, cut into chunks
  • 1 cup barley (pearled or hulled)
  • 4 cups beef broth
  • 1 large onion, chopped
  • 2 medium carrots, diced
  • 2 stalks celery, diced
  • 1 cup corn (frozen or fresh)
  • 1 can (14 oz) diced tomatoes
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • to taste salt and pepper
  • as needed olive oil for browning

Method
 

Preparation
  1. In a large pot, heat olive oil over medium-high heat. Add beef chunks, season with salt and pepper, and brown on all sides.
  2. Stir in chopped onion, carrots, and celery. Cook for about 5-7 minutes until softened. Add garlic and sauté for an additional minute.
  3. Pour in beef broth, corn, and tomatoes. Add thyme and bring the mixture to a boil.
  4. Stir in the barley and reduce heat. Let it simmer uncovered for about 45 minutes or until the barley and beef are tender.
  5. Adjust seasoning as needed with salt and pepper before serving.

Notes
