- In a large pot, heat olive oil over medium-high heat. Add beef chunks, season with salt and pepper, and brown on all sides.
- Stir in chopped onion, carrots, and celery. Cook for about 5-7 minutes until softened. Add garlic and sauté for an additional minute.
- Pour in beef broth, corn, and tomatoes. Add thyme and bring the mixture to a boil.
- Stir in the barley and reduce heat. Let it simmer uncovered for about 45 minutes or until the barley and beef are tender.
- Adjust seasoning as needed with salt and pepper before serving.
