Preparation
- Preheat the oven to 245°C (475°F) and position a pizza stone or heavy baking tray inside to heat thoroughly.
- Roll out the pizza dough on a lightly floured surface to your preferred thickness. Brush the outer rim with olive oil to encourage a golden crust.
- Spread the barbecue sauce evenly over the dough, making sure to leave a border around the edge.
- Scatter the mozzarella and smoked gouda or cheddar over the sauce.
- Distribute the shredded chicken, chopped bacon, and thin slices of red onion evenly across the surface. Sprinkle smoked paprika for added smoky depth.
Baking
- Transfer the assembled pizza onto the preheated stone or baking tray. Bake for 10 to 13 minutes, or until the crust is golden and the cheese melts and bubbles.
- Remove from the oven and allow to cool for 2 to 3 minutes. Garnish with chopped cilantro or scallions if desired.
- Slice and serve promptly while hot.

Notes
If you have leftovers, let the pizza cool completely and then place it in an airtight container. Store it in the refrigerator for up to 3 days. To reheat, simply pop it in the oven or microwave until warmed through. Feel free to use any leftover cooked meats you have on hand. Experiment with different types of cheese for added flavor. If you like it spicy, consider adding some jalapeños or hot sauce before baking. You can customize this pizza with various toppings like bell peppers or mushrooms.
