  • 2 cups cooked rice Use day-old rice for better texture.
  • 1 cup cooked chicken, shredded Leftover chicken works great.
  • 1/2 cup frozen peas and carrots
  • 2 tablespoons soy sauce
  • 1 tablespoon sriracha Adjust to taste.
  • 2 large eggs, beaten
  • 2 count green onions, chopped For garnish.
  • 1 tablespoon vegetable oil For frying.
  • Salt and pepper to taste

Preparation

  • Heat vegetable oil in a large skillet over medium heat.
  • Add the beaten eggs and scramble them until fully cooked.
  • Add the cooked rice to the skillet and stir well to combine with the eggs.
  • Stir in the shredded chicken, peas, and carrots.
  • Add soy sauce and sriracha, mixing to evenly coat the ingredients.
  • Cook for a few minutes until everything is heated through.
  • Toss in the chopped green onions and season with salt and pepper to taste.
  • Serve hot.

Notes

You can garnish with additional green onions or a drizzle of sriracha for an extra kick. Goes great with a side of salad or steamed vegetables.
