For the Sauce
  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha Add more for extra spiciness.
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice

Method
 

Cooking the Rice
  1. Cook your rice according to the package instructions. If you have a rice cooker, use it for perfectly fluffy rice.
Preparing the Chicken
  1. While the rice cooks, cut the chicken breast into bite-sized pieces. Season generously with salt and pepper.
Sautéing the Chicken
  1. In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces, sautéing until golden brown and cooked through, about 6-8 minutes.
Making the Sauce
  1. In a small bowl, mix together the mayonnaise, sriracha, honey, garlic powder, and lime juice. Taste and adjust the flavors.
Adding the Veggies
  1. Once the chicken is cooked, toss in your mixed veggies. Stir-fry for an additional 2-3 minutes until they’re just tender.
Combining and Serving
  1. Remove the skillet from heat and pour the sauce over the chicken and veggies, mixing well to coat. Serve your bang bang chicken over a mound of rice.
