Ingredients
Method
Cooking the Rice
- Cook your rice according to the package instructions. If you have a rice cooker, use it for perfectly fluffy rice.
Preparing the Chicken
- While the rice cooks, cut the chicken breast into bite-sized pieces. Season generously with salt and pepper.
Sautéing the Chicken
- In a large skillet, heat olive oil over medium-high heat. Add the chicken pieces, sautéing until golden brown and cooked through, about 6-8 minutes.
Making the Sauce
- In a small bowl, mix together the mayonnaise, sriracha, honey, garlic powder, and lime juice. Taste and adjust the flavors.
Adding the Veggies
- Once the chicken is cooked, toss in your mixed veggies. Stir-fry for an additional 2-3 minutes until they’re just tender.
Combining and Serving
- Remove the skillet from heat and pour the sauce over the chicken and veggies, mixing well to coat. Serve your bang bang chicken over a mound of rice.
