Ingredients
  

Chicken and Sauce
  • 1 lb boneless, skinless chicken breast
  • 1/2 cup mayonnaise
  • 2 tablespoons sriracha
  • 1 tablespoon honey
  • 1 teaspoon garlic powder
  • 1 teaspoon lime juice
Veggies and Rice
  • 1 cup cooked rice (white, brown, or cauliflower) Cook according to package instructions
  • 1 cup mixed veggies (broccoli, bell peppers, carrots) Feel free to substitute with your favorites
  • 2 tablespoons olive oil For cooking the chicken
  • to taste salt and pepper For seasoning chicken

Method
 

Preparation
  1. Cook the rice according to package instructions. Once fluffy, set aside.
  2. Cut the chicken breast into bite-sized pieces and season with salt and pepper.
Cooking
  1. In a large skillet, heat olive oil over medium-high heat. Add chicken pieces and sauté until golden brown, about 6 to 8 minutes.
  2. While the chicken cooks, mix together mayonnaise, sriracha, honey, garlic powder, and lime juice in a small bowl.
  3. Add mixed veggies to the skillet after the chicken is browned and cook for another 2 to 3 minutes until tender-crisp.
  4. Remove skillet from heat and pour the sauce over the chicken and veggies, stirring to coat.
  5. Serve the chicken and veggie mixture over the cooked rice, garnishing with additional sriracha or chopped green onions if desired.

Notes
