Preparation
- Cook the rice according to package instructions. Once fluffy, set aside.
- Cut the chicken breast into bite-sized pieces and season with salt and pepper.
Cooking
- In a large skillet, heat olive oil over medium-high heat. Add chicken pieces and sauté until golden brown, about 6 to 8 minutes.
- While the chicken cooks, mix together mayonnaise, sriracha, honey, garlic powder, and lime juice in a small bowl.
- Add mixed veggies to the skillet after the chicken is browned and cook for another 2 to 3 minutes until tender-crisp.
- Remove skillet from heat and pour the sauce over the chicken and veggies, stirring to coat.
- Serve the chicken and veggie mixture over the cooked rice, garnishing with additional sriracha or chopped green onions if desired.
