Ingredients
  

Dry Ingredients
  • 3 cups all-purpose flour Feel free to swap half for whole wheat flour for a nuttier flavor.
  • 1.5 teaspoons baking soda
  • 0.5 teaspoon fine salt
  • 1 teaspoon ground cinnamon Optional, but recommended for warmth.
Wet Ingredients
  • 1 cup unsalted butter, melted and cooled slightly You can also use 3/4 cup neutral oil if you prefer.
  • 1.25 cups packed brown sugar Or for a lighter molasses flavor, try 1 cup brown plus 1/4 cup granulated.
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 4-5 very ripe bananas mashed Roughly 2 cups. Make sure your bananas are nicely ripe—they should almost be speckled brown.
  • 0.5 cup plain yogurt or sour cream Optional but enhances moisture.
Nuts
  • 1 cup chopped walnuts or pecans Toasted for extra flavor and crunch.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a standard loaf pan.
  2. In a large mixing bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).
  3. In a separate bowl, combine the melted butter and brown sugar. Stir well until mixed.
  4. Add the eggs, vanilla extract, and mashed bananas to the butter mixture, mixing until everything is well combined.
  5. Gently mix the dry ingredients into the wet ingredients until just combined. It's okay if some flour streaks remain; do not overmix.
  6. Fold in the yogurt or sour cream and the chopped nuts, ensuring even distribution.
  7. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake in your preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let the loaf cool in the pan for about 10 minutes before carefully transferring it to a wire rack to cool completely.
