Preparation
- Preheat your oven to 350°F (175°C) and grease a standard loaf pan.
- In a large mixing bowl, whisk together the flour, baking soda, salt, and cinnamon (if using).
- In a separate bowl, combine the melted butter and brown sugar. Stir well until mixed.
- Add the eggs, vanilla extract, and mashed bananas to the butter mixture, mixing until everything is well combined.
- Gently mix the dry ingredients into the wet ingredients until just combined. It's okay if some flour streaks remain; do not overmix.
- Fold in the yogurt or sour cream and the chopped nuts, ensuring even distribution.
- Pour the batter into the prepared loaf pan and smooth the top.
Baking
- Bake in your preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean.
- Let the loaf cool in the pan for about 10 minutes before carefully transferring it to a wire rack to cool completely.
