Preparation
- Preheat oven to 350°F (175°C). Grease and flour two 9×5-inch loaf pans or line with parchment.
- In a medium bowl, whisk together the flour, baking soda, salt, and cinnamon. Set aside.
- In a large bowl, whisk melted butter and brown sugar until blended. Add eggs and vanilla; whisk until smooth.
- Stir in the mashed bananas and yogurt (if using) into the wet mixture.
- Add dry ingredients to wet and fold gently with a spatula until just combined. Do not overmix.
- Fold in nuts or chocolate chips.
Baking
- Divide batter evenly between the two prepared pans, smoothing the tops.
- Bake for 50–60 minutes, rotating pans halfway through, until a toothpick inserted in the center comes out with a few moist crumbs.
- Let loaves cool in pans for 10–15 minutes, then turn out onto a wire rack to cool completely before slicing.

Notes
