Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large bowl, mash the ripe bananas until smooth.
- Stir in the melted butter and mix well.
- Add the sugar, egg, and vanilla (if using) to the banana mixture and combine.
- In another bowl, mix the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix!
- Fold in the chopped nuts gently.
- Pour the batter into the prepared loaf pan and smooth the top.
Baking
- Bake for 55-60 minutes, or until a toothpick inserted in the middle comes out clean.
- Let cool for about 10 minutes before transferring the bread to a wire rack to cool completely.
