  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup sour cream Can be substituted with Greek yogurt or buttermilk.
  • 1/2 cup chopped nuts (optional) Walnuts or pecans can be used.
Streusel Topping
  • 1/2 cup brown sugar
  • 1/4 cup flour
  • 1/4 cup butter
  • 1 teaspoon cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a large bowl, cream together the softened butter and sugar until the mixture is light and fluffy.
  3. Add the mashed bananas, eggs, and vanilla extract, mixing thoroughly until combined.
  4. In a separate bowl, combine the flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the banana mixture, alternating with the sour cream, until entirely incorporated.
  5. If you're using them, gently fold in the chopped nuts for added texture.
  6. Pour the batter into your prepared pan.
  7. For the streusel topping, mix together the brown sugar, flour, butter, and cinnamon until it reaches a crumbly consistency. Sprinkle this mixture generously over the cake batter.
Baking
  1. Bake in the preheated oven for about 35-40 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow your cake to cool slightly before serving.
