Ingredients

Dough Ingredients
  • 1.5 cups mashed ripe bananas (about 3 bananas) Ensure the bananas are very ripe for maximum sweetness.
  • 4 cups all-purpose flour Can substitute with a gluten-free blend.
  • 2.5 tsp instant yeast Can substitute with active dry yeast.
Filling Ingredients
  • to taste cinnamon Adjust according to taste preference.
  • to taste sugar Brown sugar can be used for a deeper flavor.

Method

Preparation
  1. In a mixing bowl, combine the mashed bananas with the instant yeast. Stir until well mixed.
  2. Gradually add in the all-purpose flour, mixing with a spoon or your hands until a soft dough starts to form.
  3. Transfer the dough to a floured surface and knead it until smooth and elastic, about 5 to 7 minutes.
  4. Place the dough in a lightly greased bowl and cover with a damp cloth. Let it rise in a warm place until it's doubled in size, approximately 1 hour.
Assembly and Baking
  1. After the dough has risen, roll it out on a floured surface into a rectangular shape. Sprinkle generously with cinnamon and sugar.
  2. Roll the dough tightly into a log. Slice it into individual rolls about 1 inch thick.
  3. Arrange the rolls in a greased baking dish, leaving some space between them, and let them rise again for 30 minutes.
  4. Preheat your oven to 350°F (175°C), and bake the rolls for 25-30 minutes or until they are golden brown and fragrant.
  5. Once baked, allow the rolls to cool slightly before serving.
