Ingredients
  

For the Marinade
  • 2 large portobello mushrooms Make sure to clean them gently with a damp cloth.
  • 2 Tablespoons soy sauce Can substitute with tamari or coconut aminos.
  • 1 Tablespoon balsamic vinegar
  • 1/2 teaspoon minced garlic
  • 1/4 teaspoon minced or grated ginger root
  • 1/2 Tablespoon olive oil

Method
 

Preparation
  1. Preheat your oven to 400° F (205° C).
  2. Find a baking dish that fits both mushroom caps and optionally line it with foil for easy cleanup.
  3. In a bowl, add all marinade ingredients except for the mushroom caps and mix well.
  4. Rub the marinade all over the mushrooms and let them sit stem-side down for 15 minutes.
  5. After 15 minutes, rub the mushrooms again with the marinade and place them in the baking dish.
Baking
  1. Bake the mushrooms in the oven for 15 minutes.
  2. After 15 minutes, take the mushrooms out, turn them over, and spoon any remaining marinade over them.
  3. Continue baking for another 5-15 minutes, depending on the size of the mushrooms.
  4. Once done, remove the mushrooms from the oven and let them sit for 5 minutes before slicing and serving.

Notes

These mushrooms can be served solo, added to salads, grain bowls, or as sandwich fillings. Leftovers can be stored in an airtight container in the refrigerator for about 3-4 days. Reheat in the oven or microwave, keeping in mind that texture may change during reheating. Adjust marinade ingredients to taste. For extra flavor, sprinkle herbs or spices before baking. Consider adding cheese during the last minutes of baking for a cheesy twist.
