  • 4 pieces ripe pears The riper, the better for flavor!
  • 0.5 cup mixed fresh berries Feel free to mix and match your favorites.
Toppings
  • 0.5 cup walnuts Roughly chopped; can substitute with sunflower/pumpkin seeds for a nut-free option.
  • 0.25 cup blue cheese Crumble; can substitute with goat cheese or vegan cheese.
  • 2 tablespoons honey Maple syrup is a great alternative.
  • fresh thyme sprigs Optional for garnish.
Base Ingredients
  • 2 tablespoons butter Or vegan butter, if you prefer.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. Cut the pears in half lengthwise and scoop out the core.
  3. In a baking dish, place the pear halves cut side up. Add a small pat of butter to each half if desired.
Assembly
  1. Sprinkle fresh berries into the cavity of each pear. Then, add chopped walnuts on top.
  2. Crumble blue cheese over the pears and nuts.
  3. Finish with a drizzle of honey over the entire dish.
Baking
  1. Place in the oven and bake for about 25-30 minutes, or until the pears are tender and slightly caramelized.
  2. If desired, add fresh thyme sprigs before serving.
