  • 0.5 cup Mixed Fresh Berries Raspberries, blueberries, or strawberries work well.
  • 0.5 cup Walnuts Roughly chopped; substitute sunflower or pumpkin seeds for a nut-free option.
  • 0.25 cup Blue Cheese Crumble; you could also use goat cheese or a vegan cheese alternative.
  • 2 tablespoons Honey Maple syrup is a great substitute if preferred.
  • to taste Fresh Thyme Sprigs Optional, for garnish.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Halve the pears and scoop out the core, making a small well for the filling.
Cooking
  1. In a skillet over medium heat, melt the butter until bubbly.
  2. Add the mixed berries and walnuts to the skillet, stirring gently to combine.
  3. Spoon the berry and nut mixture into the pear halves, packing them gently.
  4. Sprinkle crumbled blue cheese over each filled pear, then drizzle honey on top.
  5. Arrange the pears in a baking dish and pour a splash of water into the bottom of the dish to help steam the pears.
  6. Bake for 25-30 minutes or until they are tender and slightly caramelized.
Serving
  1. Remove from the oven, garnish with fresh thyme if desired, and serve warm.
