  • 4 pieces chicken breasts (or your favorite cuts of poultry)
  • 2 tablespoons olive oil
  • 1 whole lemon (juice) Juice of 1 lemon
  • 2 teaspoons lemon zest
  • 1-2 teaspoons black pepper To taste
  • 1 teaspoon garlic powder
  • to taste salt
  • to taste Fresh parsley For garnish, optional

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix together olive oil, lemon juice, lemon zest, black pepper, garlic powder, and salt to form a marinade.
  3. Add the chicken to the bowl and ensure each piece is well coated in the marinade. Let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator).
Cooking
  1. Place the marinated chicken on a baking sheet lined with parchment paper or in a baking dish.
  2. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
Serving
  1. Garnish with freshly chopped parsley if desired and serve with your favorite sides.

Notes

To store leftovers, place the chicken in an airtight container and refrigerate. It will last for about 3-4 days.
