Preparation
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix together olive oil, lemon juice, lemon zest, black pepper, garlic powder, and salt to form a marinade.
- Add the chicken to the bowl and ensure each piece is well coated in the marinade. Let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator).
Cooking
- Place the marinated chicken on a baking sheet lined with parchment paper or in a baking dish.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).

- Garnish with freshly chopped parsley if desired and serve with your favorite sides.
