Preparation
- Preheat your oven to 400°F (200°C).
- Divide the tomatoes, bell pepper, red onion, garlic, and feta cheese among four oven-safe dishes or combine in a large baking dish. Drizzle olive oil over each individual dish or over the combined mixture.
- In a small bowl, combine the dried oregano, sea salt, dried thyme, black pepper, and red pepper flakes. Stir well and sprinkle over the feta and veggies.
Baking
- Place the dishes in the oven and bake for 25 minutes.
- Remove from the oven and stir to mix the feta with the veggies. Add the spinach and mix again.
- Create wells in the center of each dish and crack an egg into each well.
- Return to the oven and bake for an additional 10 minutes, or until eggs are cooked to your liking.
Serving
- Top with fresh herbs or sliced chives as desired and serve immediately with crusty bread or pita.

Notes
You can substitute vegetables or herbs based on what's available. For a spicy touch, add jalapeños, or consider using goat cheese instead of feta.
