Ingredients
  

Vegetables and Cheese
  • 2 cups cherry or grape tomatoes
  • 1 red bell pepper, diced
  • 1/2 small red onion, diced
  • 3 cloves minced garlic
  • 8 ounces feta cheese
  • 1 cup chopped baby spinach
Seasonings and Oil
  • 4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon red pepper flakes
Eggs
  • 4 large eggs
Optional Toppings
  • chopped fresh basil or fresh chives For garnish

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Divide the tomatoes, bell pepper, red onion, garlic, and feta cheese among four oven-safe dishes or combine in a large baking dish. Drizzle olive oil over each individual dish or over the combined mixture.
  3. In a small bowl, combine the dried oregano, sea salt, dried thyme, black pepper, and red pepper flakes. Stir well and sprinkle over the feta and veggies.
Baking
  1. Place the dishes in the oven and bake for 25 minutes.
  2. Remove from the oven and stir to mix the feta with the veggies. Add the spinach and mix again.
  3. Create wells in the center of each dish and crack an egg into each well.
  4. Return to the oven and bake for an additional 10 minutes, or until eggs are cooked to your liking.
Serving
  1. Top with fresh herbs or sliced chives as desired and serve immediately with crusty bread or pita.

Notes

You can substitute vegetables or herbs based on what's available. For a spicy touch, add jalapeños, or consider using goat cheese instead of feta.
