For the marinade
  • 3 tablespoons olive oil Avocado oil can also work if you prefer a neutral flavor.
  • 3 cloves garlic, minced In a pinch, substitute about 1/2 teaspoon of garlic powder.
  • 1 large lemon, juiced and zested Essential for brightness; you could use orange for a sweeter twist.
  • 1 teaspoon paprika Smoked paprika adds wonderful depth if you enjoy a smoky flavor.
  • 1/2 teaspoon dried thyme Oregano or fresh thyme can be good substitutes.
  • to taste teaspoon salt Kosher salt is preferable for more control over seasoning.
  • to taste teaspoon black pepper
For the cod
  • 4 pieces cod fillets Each about 6 oz; fresh is best, although frozen, thawed cod works too.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a small bowl, combine the olive oil, minced garlic, lemon juice, lemon zest, paprika, thyme, salt, and pepper.
  3. Place the cod fillets in a baking dish and pour the marinade over them, ensuring they're well coated.
  4. Let the fillets marinate for about 15 minutes to absorb the flavors.
Cooking
  1. Bake in the preheated oven for 12-15 minutes, or until the fish flakes easily with a fork.
  2. Serve immediately, and enjoy the delightful aroma and taste!
