  • 2 large zucchinis, sliced Aim for uniform slices, about ¼ inch thick.
  • 1 cup shredded mozzarella cheese Can be substituted with other cheeses if desired.
  • ½ cup grated Parmesan cheese Feel free to mix in different cheeses for added flavor.
  • 1 cup marinara sauce Fresh marinara can be used for a homemade touch.
  • 2 tablespoons olive oil Used to coat zucchini for flavor.
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • to taste Salt and pepper
  • optional Fresh basil for garnish Adds a touch of color and freshness.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Toss the zucchini slices with olive oil, garlic powder, oregano, salt, and pepper in a large bowl until well-coated.
  3. Layer half of the zucchini slices in a greased baking dish.
  4. Spread half of the marinara sauce over the first layer of zucchini.
  5. Sprinkle half of both cheeses over the marinara sauce.
  6. Repeat the layering with the remaining zucchini, marinara, and cheeses.
Baking
  1. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and golden.
  2. Garnish with fresh basil before serving.

Notes
