  • 1 whole wheel of Brie
  • Plums halved and pitted Fresh plums add sweetness; consider experimenting with figs or pears.

  • 1 egg for egg wash (to brush pastry) Helps achieve a golden finish.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Roll out the puff pastry on a floured surface.
  3. Place the Brie in the center of the pastry.
  4. Arrange the halved plums around the Brie and sprinkle with fresh thyme.
  5. Drizzle with honey or brown sugar if desired.
  6. Fold the pastry over the Brie and plums, sealing the edges.
  7. Brush the pastry with egg wash for a golden finish.
  8. Bake for 20-25 minutes or until the pastry is golden brown.
  9. Allow to cool for a few minutes before serving.
  10. Serve warm and enjoy!

Notes
