Ingredients
  

  • 1 1/2 cups rolled oats
  • 2 large eggs, beaten
  • 1/2 cup milk
  • 1/3 cup brown sugar
  • 1/4 cup unsweetened applesauce
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 2 medium apples, peeled and chopped

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit. Spray an 8x8 baking dish with non-stick spray.
  • In a mixing bowl, combine all the ingredients except for the apples. Stir well to combine.
  • Fold in the chopped apples.
  • Spread the mixture into the prepared baking dish and bake for 30 minutes or until a knife comes out mostly clean with just a few moist crumbs.
  • Spoon the baked oatmeal into bowls and serve with a pat of butter and a drizzle of maple syrup, if desired.

Notes

This Baked Apple Oatmeal can be easily customized with your favorite toppings such as nuts, dried fruits, or a dollop of yogurt. Feel free to adjust the sweetness level by adding more or less brown sugar according to your taste preferences.
