Ingredients
  

  • 1 1/2 cups rolled oats
  • 2 large eggs, beaten
  • 1/2 cup milk
  • 1/3 cup brown sugar
  • 1/4 cup unsweetened applesauce
  • 2 teaspoons ground cinnamon
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground nutmeg
  • 2 medium apples, peeled and chopped

Equipment

  • 8x8 Baking Dish
  • Mixing bowl
  • Non-stick Spray

Method
 

  1. Preheat the oven to 350 degrees Fahrenheit. Spray an 8x8 baking dish with non-stick spray.
  2. In a mixing bowl, combine all the ingredients except for the apples. Stir well to combine.
  3. Fold in the chopped apples.
  4. Spread the mixture into the prepared baking dish and bake for 30 minutes or until a knife comes out mostly clean with just a few moist crumbs.
  5. Spoon the baked oatmeal into bowls and serve with a pat of butter and a drizzle of maple syrup, if desired.

Notes

This Baked Apple Oatmeal can be easily customized with your favorite toppings such as nuts, dried fruits, or a dollop of yogurt. Feel free to adjust the sweetness level by adding more or less brown sugar according to your taste preferences.
