Ingredients
  

Base
  • 250 g chocolate cookies, crushed
  • 80 g unsalted butter, melted
Cheesecake Mixture
  • 500 g cream cheese, softened Make sure it's well softened for easy mixing.
  • 120 g powdered sugar Beat with cream cheese to avoid lumps.
  • 80 ml Baileys Irish Cream Can be replaced with non-alcoholic flavored syrup.
  • 250 ml double cream, whipped
Chocolate Topping
  • 400 g dark chocolate, melted Stir in cream until glossy.
  • 250 ml heavy cream Whip until soft peaks form.
  • 2 tbsp sugar To be added to the whipped cream.
  • Dark chocolate shavings For garnish.

Method
 

Preparation
  1. Mix crushed cookies with melted butter and press into the base of a trifle dish.
  2. Beat cream cheese with powdered sugar, then fold in the whipped double cream and stir in the Baileys. Spread this mixture over the cookie base.
  3. Melt the dark chocolate, then stir in the cream until glossy, and pour it over the cheesecake layer.
  4. Whip the cream until soft peaks form, then spoon or pipe it on top of the dessert.
  5. Finish with generous chocolate shavings.
Chilling
  1. Chill for at least 4 hours before serving to let it set.
