  • 1 pound fresh green beans trimmed and washed; haricots verts can be used as a substitute.
  • 8 slices thin-cut bacon works best for even wrapping; prosciutto can be used for a lower-fat option.
  • 2 tablespoons olive oil substitute avocado oil if desired.
  • 1 teaspoon salt kosher salt is recommended.
  • 1 teaspoon black pepper freshly ground for best flavor.
  • 1 teaspoon garlic powder or 1/2 teaspoon granulated garlic for a milder flavor.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a rimmed baking sheet with foil, placing a wire rack on top if available.
  2. Trim both ends of the green beans and pat them dry.
Cooking
  1. Divide the green beans into 8 even bundles, each containing about 6–8 beans, and wrap each with a half slice of bacon.
  2. Place bundles seam-side down on the rack or directly on the foil. Drizzle with olive oil and sprinkle with salt, pepper, and garlic powder.
  3. Roast for 18–25 minutes, turning once after 12 minutes, until bacon is golden and crisp and beans are tender-crisp. Broil for 1–2 minutes if needed.
Serving
  1. Transfer to a platter and let rest for 2–3 minutes. Serve warm or slightly cooled as an appetizer.

Notes
