Crust and Fillings

  • 1 9-inch 9-inch deep-dish pie crust (pre-baked) Ensure the pie crust is pre-baked for a crispy texture.
  • 6 strips bacon, cooked and crumbled Use leftover bacon or any cooked meat.
  • 1 cup sweet onion, thinly sliced Sauté until caramelized.
  • 2 cups fresh tomatoes, diced
  • 1 cup shredded cheese (e.g., sharp cheddar or mozzarella) Feel free to experiment with different types of cheese.
  • 3 large eggs
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh herbs (optional, e.g., basil or thyme) Can be added during assembly for extra flavor.

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet, cook the bacon until crispy, then remove and crumble.
  • In the same skillet, add the sliced onions and sauté until caramelized.
  • In a mixing bowl, whisk together eggs, heavy cream, salt, and pepper.
  • Arrange the caramelized onions, diced tomatoes, crumbled bacon, and shredded cheese in the pre-baked pie crust.
  • Pour the egg mixture over the filling until just covered.

Baking

  • Bake in the preheated oven for 30-35 minutes, or until the filling is set and the top is golden brown.
  • Allow to cool slightly before slicing and serve warm.

Notes

To store, let the pie cool completely. Place it in an airtight container and refrigerate for up to 3 days, or freeze for up to a month. For a crispy crust, ensure your pie crust is pre-baked before adding the filling.
