Pie Crust

  • 1 9-inch 9-inch deep-dish pie crust (pre-baked)

Fillings

  • 6 strips bacon, cooked and crumbled
  • 1 cup sweet onion, thinly sliced
  • 2 cups fresh tomatoes, diced
  • 1 cup shredded cheese (e.g., sharp cheddar or mozzarella)
  • 3 large eggs
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh herbs (optional, e.g., basil or thyme)

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a skillet, cook the bacon until crispy, then remove and crumble.
  • In the same skillet, add the sliced onions and sauté until caramelized.
  • In a mixing bowl, whisk together eggs, heavy cream, salt, and pepper.
  • Arrange the caramelized onions, diced tomatoes, crumbled bacon, and shredded cheese in the pre-baked pie crust.
  • Pour the egg mixture over the filling until just covered.

Baking

  • Bake in the preheated oven for 30-35 minutes, or until the filling is set and the top is golden brown.
  • Allow to cool slightly before slicing and serve warm.

Notes

For a crispy crust, ensure your pie crust is pre-baked before adding the filling. You can use leftover bacon or any cooked meat you have on hand. Feel free to experiment with different types of cheese for varied flavors. Fresh herbs can be added during assembly for extra flavor. To store the pie, let it cool completely, then place it in an airtight container and keep it in the refrigerator for up to 3 days. You can also freeze the pie for up to a month. Just make sure to wrap it well before putting it in the freezer.
