  • 6 strips bacon, cooked and crumbled
  • 1 cup sweet onion, thinly sliced
  • 2 cups fresh tomatoes, diced

  • 1/2 cup heavy cream
  • 2 large eggs
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, cook the crumbled bacon until crispy. Remove and drain on paper towels.
  3. In the same skillet, caramelize the sliced onions until golden brown.
  4. In a mixing bowl, whisk together the cream, eggs, salt, and pepper.
Assembly
  1. Layer the crumbled bacon, caramelized onions, diced tomatoes, and shredded cheese in the pre-baked pie crust.
  2. Pour the cream and egg mixture over the filling, ensuring it's evenly distributed.
Baking
  1. Bake in the preheated oven for 30-35 minutes or until the filling is set and the top is golden.
  2. Let it cool slightly before slicing. Garnish with fresh herbs if desired.
