  • 1 9-inch 9-inch deep-dish pie crust prebaked
  • 6 slices bacon cooked and crumbled
  • 1 large sweet onion thinly sliced
  • 2 medium tomatoes diced and patted dry

Cheese Mixture

  • 1.5 cups shredded cheddar cheese
  • 0.5 cup shredded mozzarella
  • 0.5 cup mayonnaise
  • 1 egg

Spices and Herbs

  • 0.5 tsp garlic powder
  • 0.5 tsp black pepper
  • 1 tbsp chopped fresh basil or parsley optional

Preparation

  • In a skillet, sauté onions over medium heat until golden and soft (about 10–15 minutes). Set aside.

Layering

  • In the prebaked crust, layer half of the bacon, caramelized onions, and tomatoes.

Mixing Topping

  • In a bowl, stir together cheeses, mayo, egg, garlic powder, and pepper.

Assembling & Baking

  • Spread the cheese mixture over the layered filling. Top with the remaining bacon.
  • Bake at 375°F (190°C) for 30–35 minutes, until bubbly and golden.

Serving

  • Let rest for 10 minutes before slicing. Garnish with fresh herbs if desired.

Notes

Pat the tomatoes dry before adding them to the pie to prevent sogginess. Don't skip the caramelizing step for the onions; it adds a rich sweetness. For extra zing, consider adding chopped jalapeños or red pepper flakes into the cheese mixture.
