  • 2 cups fresh tomatoes, diced
  • 1 cup shredded cheese (cheddar or a blend) Experiment with different cheese blends.
  • 2 large eggs
  • 1/2 cup heavy cream Consider lighter cream options if desired.

Method
 

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, caramelize the sliced onions until they turn golden brown, about 10-15 minutes.
  3. In a mixing bowl, whisk together the eggs, heavy cream, salt, and pepper until well combined.
  4. Layer the caramelized onions, diced tomatoes, and crumbled bacon into the pre-baked pie crust.
  5. Pour the egg mixture over the layered ingredients, then top with a generous amount of shredded cheese.
  6. Bake in the preheated oven for 30-35 minutes, until the filling is set and the top is golden.
  7. Allow the pie to cool slightly before garnishing with fresh herbs and slicing to serve warm.
