Preparation
  1. Preheat oven to 375°F (190°C).
  2. In a skillet, cook bacon until crisp. Remove and crumble.
  3. In the same skillet, sauté onions until translucent.
  4. Layer the tomatoes, bacon, and onions into the pre-baked pie crust.
  5. In a bowl, whisk together heavy cream, eggs, salt, and pepper. Pour the mixture over the pie filling.
  6. Sprinkle shredded cheese on top.
  7. Bake for 30-40 minutes or until set and golden.
  8. Let cool slightly, garnish with fresh herbs, and serve.
