  • 0.5 cup beef broth

Cooking

  • In a large skillet, cook the bacon over medium heat until crispy. Remove the bacon and set it aside, leaving the grease in the skillet.
  • Add the chopped onion to the skillet and cook until softened.
  • Add the ground beef to the skillet and cook until browned. Drain any excess fat.
  • Stir in the ketchup, tomato paste, Worcestershire sauce, Dijon mustard, beer, and beef broth. Let the mixture simmer for 10-15 minutes.
  • Stir in the cubed cheddar cheese until it melts.
  • Spoon the mixture onto the brioche buns and top with crispy bacon. Serve warm.

Notes

For serving, add pickles or coleslaw on the side for extra crunch. This dish pairs well with fries or potato chips. Leftovers can be stored in an airtight container for up to three days.
